Perfect A La Carte at Hotelympia

Using the SelfCooking Centres Finishing technology, chefs at this years show will deliver perfectly cooked food quickly with minimum hassle.

IF you want to see chefs producing A La Carte meals in a real restaurant situation, where timing is crucial, check out the Rational Real Restaurant at Hotelympia 2008.

But don`t expect to see them under pressure. They`ll be using the SelfCooking Center`s `Finishing` technology to deliver perfectly cooked food, quickly, with no hassle.

With `Finishing` dishes can be prepared in advance, so it`s perfect for a la carte cookery. For example, up to 150 meals can be prepared by two chefs beforehand, then plated as the orders come in.

Crucially for a la carte cooking, different foods can be prepared in one SelfCooking Center simultaneously, with no risk of cross contamination, and the `Finishing` can be controlled rack by rack.

The chef simply puts the plated meals in the SelfCooking Center, selects `Finishing` on the control panel, tells the unit what food is being prepared and chooses a rack.

The SelfCooking Center automatically calculates each rack`s `Finishing` time accurately, and tells the chef when it is ready. What`s more, when the door is opened and the rack taken out, the `Finishing` technology makes allowance for the interruption to adjust cooking times for the other racks.

Temperature, cooking climate, time and air speed are continuously adjusted throughout the cabinet to ensure all dishes are perfectly prepared.

The separate ‘climate control’ and airflow pattern over the food ensures there is no cross-contamination between different foods (for example, meat or vegetarian dishes) and avoids pools of condensation or dried-up food.

Thus, for example, a rack of roast dinners, another of souffl?s and a third of meringue can be finished simultaneously, in one Rational.
