John Davey, General Manager of Morton’s private members club and restaurant in London’s Mayfair is leaving after four years to work set up a training company and recruitment franchise.
He has spent 30 years at the top level of the hospitality industry. Before Morton’s Davey worked at Cecconi’s, also in Mayfair, Conran’s Bibendum in South Kensington and Mossimann’s in Knightsbridge.
According to Davey, “there’s not enough training being done in the industry. A lot of people who work in hospitality don’t know what it means.”
To this end, Davey and an as yet unnamed business partner are setting up a training business to launch later this year where students will learn the definition of hospitality “using four parts of the body” explained Davey.
He is also setting up a London franchise of Austrian recruitment company Teamwork One.
However, Davey will be keeping his hand in the restaurant industry by working a few shifts a week at Mosaico Italian restaurant in Mayfair. He said,”I’ve known the owners for years and they’ve kept asking me to go and work there”.
A replacement General Manager is currently being sought for Morton’s, which is owned by the Marlon Abela Restaurant Corporation which also owns UMU and the Greenhouse.
