JUPITER chef Paul Kitching has revealed he is moving out of the North West to conquer Edinburgh’s restaurant scene.
He is currently looking for a site for a restaurant with rooms in the Princes Street area, and will close down his Michelin-starred Altrincham restaurant at the end of April after 12 years. He hopes to open his new venture before Christmas.
Kitching told the Scotsman newspaper that he had been to Edinburgh several times over the past decade adding, “it’s obvious Edinburgh has a very strong market to sustain so many good restaurants.”
He choose Edinburgh over London because, he said, competition in the English capital was “too cut throat”.
