Michelin starred team create HEFF feast

A team of chefs led by Michelin starred Andreas Antona to create 10 course feast for the Heart of England Fine Foods Awards

A TEAM of top chefs from the Midlands are to create a 10 course feast for the 10th anniversary celebrations of the Heart of England Fine Foods (HEFF).

Michelin starred Chef Patron Andreas Antona of Simpsons in Birmingham is to lead the team creating a menu using products from the Midlands.

The dinner is to be held at Ricoh Arena in Coventry City where the winners of the HEFF Diamond Awards will also be announced.

Antona said: “Ten years of promoting local food is a long time and therefore a big statement and, in many ways, the dinner and awards night will be a culmination of that.

“We wanted to show off the food that is produced locally in the context of a Michelin-starred meal and I am delighted I have been asked by HEFF to devise the menu. I hope we can show off what you can achieve with local food.”

The menu begins with canapTs, followed by chilled leek and potato soup, sour cream and chives, then asparagus and quail egg salad with rapeseed oil dressing.

Ham hock and roast chicken terrine with snow pea salad in a herb sauce, smoked trout celeriac, remoulade, capers and sultanas, braised beef in Hobson’s ale, slow cooked pork belly and strawberries and English sparkling wine jelly also feature.

“We are extremely lucky to have such a prestigious brigade of award-winning chefs who are very excited to be working with us to celebrate 10 years of regional food from the Heart of England,” said HEFF chief executive Karen Davies.

“This is a true accolade to the quality of food and drink produced by our members.”

The Diamond Awards, which have four finalists in each of nine categories, generated more than 275 entries from 65 companies from Birmingham and the Black Country, Herefordshire, Warwickshire, Worcestershire, Staffordshire and Shropshire.
