Atul Kochhar’s Hampshire restaurant Vatika will open its doors to the public this Friday.
The 45-cover restaurant – Kochhar’s first outside London – is situated within Wickham Vineyard and will serve modern British food with an Indian twist using local ingredients.
Kochhar said: “Vatika will mark a major shift, being able to use local produce so close to the restaurant is key. My vegetable farmer is opposite the vineyard, the beef is just down the road and the poultry farmer is directly behind us. Having such fresh, quality local ingredients will inspire a great menu”.
Dishes on the menu include a starter of Tamarind Poached Monk Cheeks with Steamed Raita and Iced Cucumber and mains of Goan Spiced Lobster Tail with Granny Smith Confit and Lentil Sweet ‘n’ Sour and Charred Basil Chicken with Stewed Corn and Pickled Avocado. Desserts include Warm Carrot Pudding with Pistachio Ice cream and Flame Grilled Sultanas and Chilled Mango Soup with Warm Sago Risotto and Cacao Wafers.
A team from Kochhar’s London restaurant Benares has been put in place at Vatika. Jitin Joshi has been appointed Head Chef and will be joined by Pastry Chef Anthony Taylor and Restaurant Manager Bernine Van Schoor.
The wine list will be compiled and managed by Benares Head Sommelier Constanzo Scala.
