The team behind the Le Bouchon concept has announced an October opening date for the latest project Le Bouchon Breton.
Money broker turned restaurateur Ian Stoppani and chef Michel Roux Jr will open the French brasserie in the heart of Spitalfields market on October 3.
Nicolas Laridan, Head Chef at Roux`s Le Gavroche for the past seven years, will head up the new kitchen while the restaurant`s former sommelier Francois Bertrand will match dishes to a wine list of more than 700 bins.
The 200-cover restaurant will take its influence from Parisian brasseries such as La Coupole and Bofinger and will include a 50-cover Champagne bar.
The menu, created by Laridan and Roux, will include Breton shellfish flown in daily and brasserie classics such as Moules Marinieres, and Quenelles de Brochet.
Breakfast and light snacks including omelettes, oeufs au plat, Croque Monsieur and Madame will also be served every day.
Stoppani said: “We are delighted to be opening Breton in the second wave of this exciting new development. Spitalfields is crying out for a decent brasserie and Champagne bar and Le Bouchon Breton, with its exceptional team and offering is sure to make an instant impact.”
