Belgian restaurant group Belgo has recruited its very own "beerologist" to source the best Belgian beers for its forthcoming Oktoberfeast menu.
The company sent Sam Hjelm (pictured) to Belgium to track down the best beers to match individual dishes on the special menu that will be available in its restaurants throughout October.
Beer and food matches include Chicken Liver Terrine with a Raspberry Beer Chutney and DeKoninck beer, Moules Blanches with Affligem Blonde and Poached Pear with Fruli Strawberry.
Hjelm is recruited by Belgo`s holding company Tragus to source new beers and also train staff in beer and food matching. At Belgo alone, there are 100 different beers on the menu.
His recent trip to Belgium included a visit to Trappist monasteries where monks make brews using traditional medieval recipes.
