UP Box and Braehead cook school appointments

Former Le Gavroche chef Steven Doherty has been appointed managing director of a new cook school at the headquarters of meat, game and deli goods specialist Braehead.
Doherty, who worked as sous chef at Le Gavroche before he was promoted to executive chef at The Grand Hotel in Amsterdam, will work in a consultative role, overseeing the whole operation at the new headquarters in Kilmarnock.
He said: “It’s the wish of Craig Stevenson (Braehead managing director) and myself to establish Braehead’s cook school as one of the leading cook schools in Scotland and the UK as a whole within the next three years and we look forward to achieving this target."
Take-away lunch company UP Box has also employed Rick Stein’s former head sushi chef Ron Laity as its new chef.
Laity, who was also Executive Chef of Yakitoria, has come up with a new menu of warm dishes from across the globe for the bento box-style operator and will also focus on developing a Japanese menu.
