Avenance chef team win Special Award at Salon

The chef team from Avenance contract caterers were given a Special Award in recognition of their efforts in the Salon Culinaire’s La Parade des Chefs at Hospitality 2009

The chef team from Avenance​ reigned supreme at the Hospitality show this week after receiving a Gold medal and Special Award for their performance in the La Parade de Chefs competition.

While chef teams from contract caterers Sodexo​ and Compass​, who received a silver and gold medal from their performance on Tuesday and Wednesday respectively, were awarded very high marks from diners for their set menus, it was the team from Avenance that walked away with the honour.

The Avenance team, Peter Joyner, Hayden Groves, Mark Crowe, Inga Boyce, Richard Underwood, Dagmar Pfiefer and kitchen porter Jonoy Miller, created a menu of Smoked Eel with a Twice Baked Horseradish Souffle; Pan Roasted Breast and Braised Faggot of Talamana Duck; and Poached Pear with Chocolate Fondant, Hazelnut Praline and Goat’s Cheese Parfait for 100 covers.
