While filtering cooking oil for reuse can be messy, meddlesome and a huge task for busy chefs, the latest Vito oil filtration systems alleviate the associated hassle, making cleaning oil as simple as pressing a button.
The Vito systems work by being placed into the fryer and pressing the start button. As oil is sucked up into the device, it passes through 48 filtration layers, in the case of the Vito 50 and 80, to produce cleaner oil which will essentially improve the flavour of food cooked in it. The Vito device may also save operators up to 50 per cent in oil costs.
The device is available in three sizes: the Vito 30, suitable for chip fryers only, the Vito 50, which can handle fryers up to 25 litres capacity, and the Vito 80 that can handle the biggest of fryers. An online video tutorial and further information can be found on the Vito website.
