After news today that Gordon Ramsay Holdings (GRH) has handed control of Maze Prague back to Hilton, BigHospitality can confirm that head chef Philip Carmichael has moved on to oversee the kitchens at GRH’s latest restaurant, Maze in Cape Town.
Having overseen the successful opening of Maze at the Hilton Prague Old Town hotel back in 2007, Carmichael will ensure the opening of the first GRH restaurant in Africa goes smoothly.
Despite the sudden announcement of his transfer, a spokesperson for GRH said Carmichael’s move was ‘always planned.’
Due to open in April, Maze at Cape Town will be situated within the 131-bedroom One & Only Resort at the Victoria and Alfred Waterfront, along with Nobuyuki Matsuhisa’s first African outlet of Nobu.
Maze Cape Town will be modelled on its London flagship and serve up to 170 diners a traditional South African menu devised by Jason Atherton that is rich in seafood and game.
