The team behind The Green bar and dining room in Clerkenwell has opened its second venture – a pub and restaurant in Islington called The Compass.
The 75-cover bar is situated on the corner of Chapel Market and Penton Street, and is the latest project from John Rentsen and Charlie Silver.
Ben Bishop, who has worked at The Duke of Cambridge in Islington and The Queensbury in Willesden Green joins as head chef and has created a menu designed to showcase the ‘best produce Britain has to offer’.
Dishes include ham hock and confit chicken terrine, piccalilli and toast, roast wood pigeon with broad beans, Jersey new potatoes, butter onions and pan juices and desserts such as vanilla and Earl Grey soaked prune creme brulee or strawberry Eton mess. A bar menu includes snacks such as as black pudding sausage roll with mustard and anchovies on toast.
The pub, set on two floors will be overseen by general manager Sean Young and will host events in the private room upstairs such as acoustic music evenings and short film screenings.
