A new and revised edition of Michel Roux’s Sauces is to be released this week with a fresh look at recipes from the classic cookbook published a decade ago.
With all the recipes updated and adjusted to a more contemporary and healthier method of cooking, as well as the addition of 20 new recipes, the book will be of particular interest to chefs and restaurateurs operating today in Britain.
Roux said: “Sauces are the cook’s alchemy, magically enhancing the dishes. They must, however be chosen carefully, so as to heighten the flavours of the dish without overpowering them in any way. My contemporary sauces are aromatic, light and delicate on the palate.”
The book offers simple and easy-to-follow instructions with matching step-by-step photographs. A directory which recommends the most suitable sauces for key dishes and ingredients, is also included.
Sauces will be available from stores nationwide from 2 October, at £14.99.
