A wine dispensing system that allows pubs, restaurants and hotels to keep wine bottles open for sale by the glass for up to 14 days without quality being affected has become available to UK operators for the first time.
The By the Glass wine preservation and serving system, already used in parts of Europe, utilises nitrogen to protect the wine from oxidisation, allowing bottles to remain open for longer.
Chris Roberts, sales consultant of By The Glass said: "The unit provides bars, restaurants, hotels the opportunity to offer a wider selection of quality wines to its clients.
"Research indicates that with the introduction of the By the Glass system, low cost house wines sales are reduced by more than 50 per cent with resulting increases in better quality and more expensive wines by the glass."
The behind-the-bar unit is designed to hold between six and sixteen bottles of red, white and rose wine which it dispenses in measured quantities. The system also ensures that all wines are served at the right temperature.
