Ex-Nobu head chef Scott Hallsworth is to head up the kitchen at new Japanese restaurant Wabi when it opens in Horsham, West Sussex this May.
The 135-cover restaurant and cocktail bar is the brainchild of entrepreneur André Cachia and will open on the site of the former Horse and Groom pub following a major re-design by design company Studio 21.
It will serve contemporary Japanese cuisine on two floors and cocktails from the ground floor bar featuring a state-of-the-art aquarium.
Hallsworth, originally from Australia, spent six years working at Nobu London before launching the Nobu Melbourne site in 2007.
He said: "Our goal at Wabi is to extend our years of passion and creativity to our guests. We will always continue to search for new and exciting ingredients and ideas and believe it is equally important for both guest and staff to constantly improve and evolve."
Hallsworth's dishes will include Slow Cooked Enoki Mushroom 'Risotto' with Fresh Sussex Edamame and Shaved Truffle and Smoked Duck Breast Tataki with Foie Gras Kabayaki and Ginger Amazu Sauce. The restaurant will also offer takeaway sushi and have a robata grill.
