Balfour Castle in Shapsinay, Scotland, is to launch as an exclusive use property in April, with former Kinnaird Estate head chef Jean-Baptiste Bady joining the team

The nine-bedroom, grade I listed building off mainland Orkney, which has been completely restored and refurbished with original paintings and furniture, will be able to accommodate parties of up to 18 guests when it opens on 1 April.

Bady, the Scottish Hotel Awards' Scottish Chef of the Year 2009 who headed up the kitchen at Kinnaird Estate before it closed to the public in September last year​, will offer a menu featuring local, seasonal dishes such as Orkney lobster ravioli with garden cabbage, frothy bisque and Orkney scallops, vitelotte potato and Beluga caviar, and Shapinsay’s wigeon with chestnut foam, parsley root and juniper jus.

Guests staying at Balfour Castle, which is the only exclusive use property of its kind in the Orknery Isles, will be given the opportunity to partake in several outdoor activities, such as kayaking, shooting, fishing and archery. The property will also feature a treatment room, outdoor Astroturf court, library, golf simulator and home cinema.

Balfour was previously run as a country hotel by the Zawadski family, before being sold to a private owner in February last year.
