Mark Askew, executive chef of Gordon Ramsay Holdings (GRH), will work closely with new Petrus head chef Sean Burbidge, previously of Gordon Ramsay at the Trianon Palace, in serving a modern European menu, which will include dishes such as Fillet of Angus Beef with Swiss Chard, Wild Mushrooms and Red Wine Sauce.
As reported by BigHospitality in June last year, Jean-Phillippe Susilovic will return to Petrus as Restaurant Director, taking up the role he previously held for five years.
The Russell Sage Studio, designers of sister GRH properties York and Albany and the soon-to-open Savoy Grill, have continued with their original design for Petrus’ dining room, creating an open, light space with splashes of claret red.
The restaurant will also feature a six-cover Chef’s Table, which will overlook the kitchen.
Petrus, which was originally housed at the Maybourne Hotel Group’s Knightsbridge property for five years, ceased trading in September 2008 when its contract with the hotel expired. Former Ramsay protege Marcus Wareing, who had gained two Michelin stars as head chef of Petrus, subsequently took over the restaurant’s lease and re-opened as Marcus Wareing at the Berkeley.
GRH first announced the reopening of Petrus in Kinnerton Street last summer, with a launch date penned for September 2009, but building work has forced the opening back to 29 March 2010.
