The Lancaster London hotel has appointed a new executive chef to oversee the property’s dining operation and thorough refurbishment of its kitchens.
Eibhear Coyle joins the Lancaster London after six years as executive chef of resort operations at the five hotels at Kerzner International Atlantis Paradise Island Resort in the Caribbean.
While Coyle will be responsible for updating the menus at Lancaster London’s two restaurants, Nipa and Island, he will also work to enhance the hotel’s banqueting cuisine.
The Felbridge Hotel
Meanwhile, the Felbridge Hotel in East Grinstead has also appointed an executive chef to look after the property’s Anise restaurant.
Frederick Tobin joins the West Sussex hotel with experience gleaned form working at The Dorchester, Harrods and The Royal Yacht hotel in St Helier.
With a fine dining menu focused on modern European, seasonal dishes, Tobin aims to gain a Michelin star for his food.
