St. John co-owners Fergus Henderson and Trevor Gulliver have released further details about the St. John Hotel, which is due to open in London’s Chinatown in late September.

Opening on the site of the former Manzi’s Famous Seafood Restaurant in Leicester Street, which has been stripped back to its structure before undergoing a thorough refurbishment, St. John hotel will feature 15 bedrooms and a top floor suite, plus a ground floor restaurant and first floor bar.

Being situated in the centre of Theatreland, the restaurant, which will be headed up by St. John Smithfield head chef Tom Harris, will remain open until 2am to encourage trade from theatre goers.

Gulliver, who along with Henderson saw St. John Smithfields placed number 43 in the S.Pellegrino World’s 50 Best Restaurants awards​ earlier this year, said: “We think that it is only fair that folk can eat a little later if it suits them and indeed, the orchestra and cast get a chance too.”

Matthew Rivett, formerly of The Ritz, will join the hotel as general manager, taking reservations from late July.

Gulliver and Henderson also currently operate a second restaurants at Spitalfields, St. John Bread & Wine, which opened in 2003.
