Due to launch on 23 August, Polpetto will be a ‘tiny jewel-box version’ of the Venetian bacaro-inspired Polpo, comprised of 28 covers and situated above The French House pub.
Polpo head chef Tom Oldroyd will oversee the kitchen at Polpetto, which will serve classic Polpo dishes such as Cuttlefish in its Ink, Fritto Misto and Pizzetta Bianca, alongside new additions Venetian-style soft-shell Crab in Parmesan Batter, and Pigeon Saltimbocca.
The dining room will be sympathetically redesigned to incorporate salvaged 19th Century French light fittings and restored church windows for mirrors.
Norman was originally due to open second restaurant Spuntino next month, but with the launch now delayed until October, Polpetto will open first.
“It sounds odd, but we are opening our third restaurant before our second,” he said. “The opportunity for Polpetto came along unexpectedly and we jumped at the chance to take on this legendary venue.”
