Raftery, who will officially join Kit Chapman’s 44-bedroom hotel on 1 November, will follow in the footsteps of top chefs Chris Oakes, Gary Rhodes and Phil Vickery in creating a menu that champions English produce and cookery.
However Galway-born Raftery may develop an Irish accent in the Castle’s cooking for the first time as he oversees the 60-cover fine dining restaurant, 150-cover brasserie and banqueting facilities.
The chef joins the hotel with three years experience working under Michael Caines at Gidleigh Park, and at Abode hotels assisting in the launch of the properties in Glasgow, Manchester and Exeter. He has also gained 12 months experience working with Thomas Keller at The French Laundry in the Napa Valley in LA.
Guest, who has been at The Castle for over a decade, earning in that time a Michelin star for five years, will leave at the end of this month to launch his own restaurant in the Somerset area.
