Entries for the Young Chef of the Year competition and the Young Sommelier of the Year Competition need to be made by 4 February, with the competition finals scheduled to take place in London on 17 and 23 March respectively.
Competing chefs need to be under the age of 27, and sommeliers must be no older than 35. They need to be working in Great Britain and nominated by their Chaîne des Rôtisseurs-affiliated employer or sponsored by a member of the Chaîne.
Participating chefs will be judged on the presentation, originality and taste of their three-course dishes, prepared from ingredients in a mystery box. They will also be tested on their general kitchen skills and their approach to hygiene.
Sommeliers will have a theory test to assess their knowledge of wine production, laws and viticulture, and they will also then need to demonstrate composure and skills during a mock service.
Winners of both competitions will have the chance to compete in the International Rôtisseurs competitions in September.
