Formerly the creative director of the Swan Collection, which operates restaurants at The Globe in London and West Malling, Kent, Sargeant has now joined the multi-sport members club as development chef and will work to enhance the catering across the complex’s Club Café, Sports Bar, Members Bar and banqueting and corporate menus.
Sargeant, who is due to open Rocksalt and The Smokehouse, his first solo restaurant ventures in the recently redeveloped Folkestone Harbour in May, said he was “delighted” to partner with Roehampton Club.
“The team have been really open to new ideas on the menu, new ingredients and cooking techniques,” he said. “I’m confident that the results will be delicious and hope that members and guests using the club will enjoy them.”
Sargeant, who left Gordon Ramsay Holdings in November 2009 after 13 years at the company, has also appointed Raymond Thompson as head chef at the Club, who will oversee the catering operation on a day-to-day basis.
Roehampton Club recently underwent a refurbishment to upgrade its sporting and health facitlities.
