Rene Redzepi’s Danish restaurant Noma was last year voted the Best Restaurant in the World for the first time, toppling long term stalwart El Bulli from its number one position.

Redzepi’s style of progressive cooking – inspired by the Spanish movement and utilising local Danish produce in an homage to soil and sea – has resulted in many chefs attempting to recreate the same magic in their own kitchens.

Speaking at a recent TEDx conference, Redzepi explained the origins of his foraging approach, the relatively mysterious ingredients he chooses to work with, and ultimately how his Copenhagen restaurant became the best in the world.
