Berk, also formerly of Conran Restaurants, intends to offer an authentic American BBQ experience as his first solo venture.
Red Dog Saloon will serve cuts of Boston Butt, St Louis ribs, brisket, beef short rib and chicken that have been barbecued in a hickory and mesquite-burning smoker imported from the American BBQ Company.
A selection of freshly ground burgers made from chuck steak will be available alongside a range of BBQ sandwiches and old deli classics such as Philly cheesesteak, Reubens, chilli dawgs, mac and cheese and clam chowder.
The 84-cover restaurant, which has been designed by Design LSM, is reminiscent of ranch-style dining rooms, featuring banquettes of dark wood and leather and walls adorned with water buffalo skulls and rodeo pictures.
Red Dog Saloon also features a 20-cover terraced area overlooking Hoxton Square, while an additional basement bar is scheduled to open in September.
