The 1650sqft, 70-cover restaurant is the fourth shopping centre location for the 1950’s American diner chain, which also has sites at Lakeside, Bluewater and London’s Trocadero, and its seventh overall.
Continuing the group’s trademark US diner feel, the St. David’s restaurant will feature booth, table and counter-top seating, black and white chequerboard flooring and original 1950’s Seeburg 3W1 jukebox.
Its menu will feature a range of classic US dishes, including hamburgers, hotdogs, milkshakes and fries.
Andrew Guy, operations director of Ed’s Easy Diner, said: “We are delighted to be opening in Cardiff’s magnificent St David’s Shopping Centre, our first diner in Wales and outside of the south east of England.
“The city’s already burgeoning culinary scene and an ever increasing public demand for a quality fast-casual dining experience, means this an exciting task and a challenge we both relish and respect”.
