How to run a sustainable restaurant or pub

It is now almost two years since the Sustainable Restaurant Association launched in a bid to help restaurants, pubs and caterers become more sustainable and hundreds of businesses have since been audited and rated.

Running their businesses in a more sustainable way is now a major focus for many of those restaurants and pubs, but what does it truly entail?

BigHospitality visited one of the SRA's members, the recently three-star rated Preston Park Tavern in Brighton, to find out what its owners are doing on a daily basis and show how some of the smallest changes can make the biggest difference.
