To enter, candidates must be in full time employment as a chef in the UK and be aged between 22 and 30.
They have until midnight on 30 January to submit an entry form together with a recipe for four people using a set list of ingredients which include spring chicken, veal heart sweetbreads and cauliflower. Regional finals will then take place on 8 March in Birmingham and London.
One finalist will get the chance to take the three-month stage and win a host of hospitality-related prizes as well as gain lifelong support from the Roux family.
The Roux Scholarship is one of the most highly-regarded awards in the industry with chefs Andrew Fairlie, Sat Bains and Simon Hulstone counting as previous winners.
