The celebrity chef will work closely with the prisoners of HMP High Down in Sutton, Surrey for the next three years, The Clink has announced.
Carluccio, who in the last year has already begun training prisoners and holding fundraising events, said it was an honour to work for the charity.
"I am extremely proud of the work and progress that has been achieved over the last twelve months. Working closely with the prisoners has been hugely rewarding and I look forward to continuing the training with them throughout 2012," he said.
The Clink opened in 2009 and has trained more than 100 prisoners with the aim of securing jobs for them in the hospitality industry as part of their rehabilitation after they are released.
