Clyde Hollett, head chef, Harbour Heights Hotel
The AA four-star Harbour Heights Hotel in Sandbanks, Dorset, has appointed Clyde Hollett as its new head chef.
Hollett brings more than 15 years’ experience to a role which will see him heading a nine-strong team at the hotel’s two AA red rosette restaurant, Harbar Bistro, and taking charge of the kitchen set-up and menus.
He joins the restaurant from the Bournemouth Highcliff Marriott, where he played a vital role in the success of the hotel’s Highcliff Grill, achieving an AA red rosette in just eight weeks and another AA red rosette after further development of the menu.
Commenting on his appointment, Hollett said: “I'm really looking forward to working with the team at The Harbour Heights Hotel. The hotel’s restaurant, Harbar Bistro, has an excellent reputation which I’m honoured to be a part of. I look forward to working with the hotel team, continuing to provide exceptional culinary experience at Harbar Bistro.”
