John Tremayne, head chef, The White Swan
Tom and Ed Martin, of the award-winning ETM Group, have announced the promotion of John Tremayne to head chef of The White Swan on Fetter Lane, London.
Having spent three years at The Gun, John joins The White Swan with a brief to maintain the high standards of food soacclaimed across Tom and Ed Martin’s ten sites including The Botanist on Sloane Square, The Jugged Hare on Chiswell Street and The Gun, Docklands.
Prior to The Gun, John trained under Ben Tish at Spanish restaurant Salt Yard, followed by a stint at Michelin-starred restaurant, Arbutus.
Tremayne said, “I am thrilled to have been appointed to Head Chef of The White Swan. It is a pleasure to be a part of Tom and Ed Martin’s team and hopefully I can help to further cement ETM’s excellent reputation for high quality food within the London dining scene”.
