Modernist Vegetarian is the new eBook for iPads by vegetarian chef Eddie Shepherd.
Each of its 13 chapters focuses on just one dish, which is explored in meticulous detail and broken down into many component recipes and techniques, all supported by imagery and explanatory videos.
The book contains more than 350 images and 18 detailed videos.
Manchester-based professional vegetarian chef Shepherd won the prestigious Cordon Vert cookery school's Chef of the future competition in 2009.
This stage-by-stage delivery of the book also allows it to be used as an easy reference for any single part of a dish, from a simple sauce to Eddie’s creative mastery of hydrocolloids.
There is also a strong focus on equipment, from the science laboratory kit available only to chefs to items that non-professionals can readily obtain. Ingredients are discussed in detail and demystified and links throughout the book take the reader to specialist online shops.
