Details of the restaurant's opening - scheduled for February 2013 - have been closely guarded, but it will be a 150-cover restaurant in the all-day dining mould.
Early-morning breakfasts and late-night post-theatre dinners will be a significant part of its offer, served from 7am to midnight Monday to Thursday and until 12.30 on Friday and Saturday nights.
The menu includes fruits de mer and a wide range of classical French brasserie and bistro dishes.
As in New York, there will be a next-door bakery. Bread and patisserie will be made in-house there or at an off-site bakery in Waterloo.
