Byron heads for Cambridge

The Gondola-owned group currently has two sites outside of the capital; in Oxford and the Bluewater shopping centre. It will also be opening a venue at the Liverpool ONE shopping centre this spring.
The Cambridge restaurant will open on Bridge Street, with the menu following the usual Byron model; short and simple, with four choices of hamburger and a range of classic sides and desserts.
Founded by Tom Byng in 2007, Byron now has 25 sites in London, with two more planned for Cowcross Street and the Finchley 02 Centre in the coming months. The gourmet burger chain has been hailed as one of the fastest growing restaurant concepts having more than trebled its portfolio in three years.
