French bakery producer Bridor is launching new collections, including choux pastries, at IFE 2013
In the first of BigHospitality's week of product launch news stories to coincide with the International Food & Drink Event (IFE) 2013, Bridor announces it is to launch three new bakery collections including torsades and choux pastries. 

Product details:

The three collections will all be showcased at Bridor's stand in the Bakery & Confectionery Hall at the ExCel centre alongside the company's other products - pastries, baguettes, loaves and rolls. 

The Gourmandiz collection will build on the popularity of their dark chocolate chip torsade (twist) with three new flavours - a 95g milk chocolate chip twist and two 85g twists - apricot and raspberry. There is also a new Swiss chocolate 100g 'Cravat' and a pure butter croissant with a chocolate hazelnut filling.

The Paris B collection of choux pastries features six flavours including Brest which has a hazelnut-almond praline, Tokyo with Yuzu juice and Deauville with salted butter caramel.

The new snack range of mini paniers salés has been inspired by Mediterranean cuisine. The 'savoury baskets' combine croissant dough with four vegetable compotes - tomato shallot, summer vegetables, artichoke & basil and Spirit of Pissaladière (onion, herbs and black olives). 

USP:

All three collections feature some ready-to-bake or ready-to-serve products.

The twists come in cases of 70 units and take 16-18 minutes to bake. The cravat and croissant both comes in a case of 60 - they need to be proved and can then be baked for two hours. 

The Paris B pastries come in trays with eight of each flavour and are ready-to-eat after being defrosted.

All four of the mini paniers salés are proved and glazed and can be baked for 15 minutes before being served.

A Bridor spokesperson said of the mini paniers salés: "A new snack range inspired by Mediterranean cuisine, these ‘savoury baskets’ meet the growing demand for light meals on the go, combining pure butter croissant dough, with four 100 per cent vegetable compotes."

Of the Paris B collection of choux pastries, the spokesperson said: "Developed in partnership with renowned patisserie Lenôtre, Paris B addresses the on-trend demand for choux pastries. 

"For spring/summer, inspired by the traditional Paris Brest, but taking in flavours of the world, this new collection consists of flavoured light butter mousse inside a puff pastry shell with a colourful crumble topping."
