St James’s Hotel & Club has announced the appointment of Mélissa Drapeau as bar manager of its five-star property in London's Mayfair.
Drapeau has worked for some of the world’s best-known hotels and restaurants as a commis sommelier and managing the food and beverage services. Recent posts include Dinner by Heston Blumenthal at the Mandarin Oriental, and the Grand-Hotel du Cap Ferrat in France.
She will oversee the running of the daily lunch, afternoon tea and dinner service at William’s Bar and Bistro - the hotel’s informal dining space by Michelin-starred executive chef, William Drabble. Drapeau will also be responsible for the development of beverage lists and delivery of wine service and training, assisting head sommelier, Marco Feraldi.
She said: “I am thrilled to have been appointed Bar Manager of William’s Bar and Bistro at St James’s Hotel and Club.
