Spencer Burge, head chef, Bertram's Restaurant
Bertram's Restaurant has appointed Spencer Burge as its head chef.
Burge, former head chef at The Fence Gate, said: "’m delighted to be head chef of a new, modern and vibrant restaurant, like Bertram’s. It is a fabulous venue, with stunning views looking out from what can only be described as a position of grandeur.
“My food philosophy for Bertram’s is simple: consistency is the key - source great local produce and let it shine on the plate. We’ll deliver outstanding but uncomplicated and familiar dishes, sometimes with a modern twist."
