Ryan Hanson, manager, Allium Brasserie
Ryan Hanson, former head of food & beverage operations at Hugh Fearnley-Whittingstall’s River Cottage HQ in Devon, has joined the Allium Brasserie team as manager, working alongside acclaimed chef proprietor Chris Staines.
It is a welcome return to the City for Hanson, who said: “I was very keen to come back to Bath as I really love the city.
“It’s wonderful to work with such incredibly talented people, all at the top of their fields, and to be given the autonomy to do what you do best.
“In particular I was very excited to work with Chris. When I lived and worked in London I heard such great things about him when he was head chef at Foliage, so I was already aware of his talent. I love the fact that his style of cooking cannot be pigeonholed; he has a constantly changing repertoire influenced by his love of Asian and European food, as well as his desire to make the most of seasonal, local produce.”
