Exclusive Hotels has appointed Olly Rouse as the new head chef of its five-star Hampshire property, Lainston House.

Rouse will be overseeing all of Lainston House’s F&B offerings, including Avenue restaurant which holds three AA Rosettes. The chef previously headed the kitchen at Coworth Park, helping the hotel’s restaurant achieve a Michelin star within its first year of opening.

His other experience includes time at The Vineyard at Stockcross as sous chef and at Pétrus under Gordon Ramsay Holdings, as well as stages at Le Meurice and The Fat Duck.

“Lainston House has everything I've been looking for within a property,” said Rouse. “I cannot wait to work with the team and grow our food philosophy in a really natural way. Our surroundings will be our inspiration to drive the food in the restaurant. 

“We will embrace our Kitchen Garden and set out to utilise all it produces, with interesting combinations created to intrigue and give the feel-good factor. Diners can expect dishes which are complex in flavour and texture, with simple yet elegant presentation.” 

The Exclusive Hotels Group also includes Pennyhill Park in Surrey (Michael Wignall at The Latymer), The Manor House & Golf Club (The Bybrook), and South Lodge (The Pass).
