The 40-cover restaurant on St John Street will be the company's first in the city and its first since securing a £1.4m investment from Calculus Capital to aid expansion.
Benito's Hat Farringdon will also be the first to offer a food creation counter where customers will be able to pre-order dishes for collection or delivery via the website, an app or touch-screens in-store.
It will also feature a dedicated Salsa Bar, created by the group's executive head chef Felipe Fuentes Cruz where customers will be able to choose from 10 homemade varieties including roasted pineapple and habanero, dried prawn and chipotle and fresh salsa fresca.
Founder Ben Fordham said: "We are extremely excited to announce the opening of our latest site in Farringdon. Our state-of-the-art in-store ordering system and bespoke Salsa Bar are further innovations to help keep us at the forefront of the Mexican fast casual sector.’’
Fordham is hoping to open another five sites in the next year to add to current sites in Goodge Street, Covent Garden, Oxford Circus and Kings Cross.
