Barry Snook, head chef, The Truscott Arms
The Truscott Arms, Maida Vale’s new hybrid of fine food, drink and art, has unveiled Barry Snook as its new head chef.
The Australian-born cchef brings to The Truscott Arms experience from Queensland’s acclaimed Liquorish Bistro & Bar and catering company Sustainable Catering Services. Arriving in the UK in 2012, he immediately secured a position at the Michelin-starred Chez Bruce.
Many of dishes on the menu change regularly, dependent on what is in season, but sample dishes include Roast quail with confit leg, Jerusalem artichoke purée, pickled shallot & meat juice vinaigrette and Wild sea bass with prawns, Lyonnaise potatoes, watercress purée, Brittany purple cauliflower & braised fennel.
