Drake & Morgan, the highly-regarded, bar-restaurant operator, has confirmed that its seventh site, The Fable, will open next February at Sixty London in Holborn, and said that it has 'many more exciting openings in the pipeline'.

The group, which is led by Jillian McLean, currently has a pipeline of 10 sites for the next four to five years, including its first regional trials, and also has plans for brand extensions.

The 10,000 sq.ft site will encompass three bars, a dining area, florist, library, deli, wine room and mixology tables. The venue seats 436 or holds 1,000 standing and is spread over three floors

Open from 7.30am, The Fable will offer an all-day menu with a choice of seasonal dishes from breakfast, brunch and lunch right through to afternoon tea, dinner and Sunday roasts.

The deli will offer fresh breads, cured hams, continental cheeses and condiments from Borough Market producers as well as gifts and homeware. By night the space will become an area for masterclasses such as butchery, flambé and mixology.

The florist features a roll-top bath filled with flowers whilst the wine room includes a bottle wall and tasting tables with wine available to take home.

Brand review

A large alfresco area seats 80 and will feature contemporary furniture, extensive planting, outdoor heaters and giant umbrellas to provide a versatile space in winter and summer.

The company, which is backed by Bowmark Capital, recently finished a review of its brand proposition, and has almost completed a round of senior recruits and promotions to strengthen its management team, including the appointment of former Novus COO Jason Thorndycraft as operations director.

The buyout provided the group with £10m of capital for the its expansion plans, with the group believing there is potential for it to open up to 70 sites across the UK, including up to 15 sites in the capital.
