The restaurant will be opening on the site of the former Bar Roma on Queensferry Street and will have space for 138 diners, with 132 seats inside the restaurant and space for a further six at the front. There will also be a central bar where guests can sit.
Chimichanga in Edinburgh has cost £500,000 in development, and has a large menu which includes many of the restaurant group’s favourite classics including burritos, fajitas, enchiladas and quesadillas. The menu will also feature a grill section with offerings such as Cajun chicken, sirloin steak and barbeque baby back ribs.
Operations director for Chimichanga Peter Morrison said: “We are looking forward to opening our first restaurant in Scotland.”
