Biju will offer five different types of bubble tea
Bubble tea shop Biju is opening in Soho in late July, offering a range of milk, fruit, mousse and coconut water-based teas.

Created by entrepreneur Nick Phan, Biju will serve bubble teas ranging from classic milk, ice teas and fruity milks to more adventurous savoury mousse teas, alongside a line made with coconut water blended with fruit juice nectars. 

All teas have been sourced from the birth place of bubble tea, Taiwan, and each one of them is freshly brewed to order to create a tasty, healthy drink. The 20-drink menu uses fresh organic dairy products, dairy alternatives such as soya milk, and fruit juice nectars rather than substitutes or powders. The taro milk tea is made with real taro and purple yams to give it an authentic and distinctive flavour.

Customisation

Customers will also be able to build their own drink, with toppings including tapioca pearls, various fruit jellies, and basil seeds. Biju will also offer a range of healthy snacks, including Metcalfes popcorn and rice cakes, Divine fairtrade chocolate, nuts, seeds and dried fruit. Bubble teas are priced around the £3 mark.

The tea room’s interior features stepped seating and provides room for 20 guests to comfortably enjoy their drinks, which will be made and served in front of customers in an effort to transfer the theatre of cocktail making to bubble tea.

Phan said: “Bubble tea has long been a favourite of mine, and with Biju I am aiming to raise the bar, offering the highest quality product served in a fun and engaging environment. Whether our guests are huge fans or brand new to bubble tea, Biju will have a tea for them, and our friendly staff will help them discover it.”
