The Chef Stagiaire award is looking for entrants for its 2015 competition.

The initial paper applications will be judged by a panel including James Mackenzie of The Pipe & Glass, Yorkshire, Richard Turner of Turners, Birmingham and Robert Kirby, chef director of Lexington Catering, London.

The 10 best entrants will each take part in a one-week stage at one of 10 restaurants, including Lords of the Manor, Alyn Williams at The Westbury, Restaurant Alimentum & Bar, L’Autre Pied, The Sir Charles, Napier, Restaurant Story, Lucknam Park,  Galvin la Chapelle, Arbutus – all Michelin-starred – and Mallory Court (3AA Rosette).

After that, two finalists will spend a week each at Dinner by Heston Blumenthal, where The Fat Duck group executive chef Ashley Palmer-Watts will judge them on technique, attitude and ability.

The winner will get an all-expenses-paid, four-week trip to work at Joel Robuchon’s Last Vegas Restaurant within the MGM Grand hotel for two weeks, and at the Senses on the Edge restaurant at Zighy Bay Resort in Oman for another two weeks.
