The Burlington Restaurant at The Devonshire Arms Hotel in Bolton Abbey is celebrating after receiving four rosettes in the AA's latest round up of inspections.

The restaurant, headed up by chef Adam Smith, was the only one to be awarded four AA rosettes, an accolade given to restaurants for showing ‘intense ambition, a passion for excellence, superb technical skills and an appreciation of culinary traditions combined with a desire for exploration and improvement'.

Roux Scholar Smith, who joined the restaurant in 2013 from The Ritz, said: “I am delighted for the whole Burlington team who continuously work hard to ensure all our guests enjoy a fantastic dining experience. It has been a brilliant opportunity sourcing some of the best produce in Yorkshire to create some fantastic new dishes. I am proud of this achievement after only 18 months here at The Dev as head chef. A huge thank you to my team who have helped us gain this brilliant award.”

The Duke of Devonshire, owner of the 30,000 acre Bolton Abbey estate where the hotel is based added: “We are absolutely thrilled of Adam’s achievement for the Burlington restaurant – we are extremely lucky to have such a talented rising star with us at the Devonshire Arms Bolton Abbey. As the one and only restaurant to be awarded 4 AA rosettes in January 2015 we are very proud to support Adam – his team and the superb Yorkshire growers who supply the kitchen with a wealth of fantastic seasonal produce."

Twenty-two restaurants, including Simon Rogan's Fera at Claridge's and The Five Fields in London as well as Kenny Atkinson's Newcastle restaurant House of Tides were awarded three rosettes.

Three rosette restaurants are judged to be 'outstanding' and 'demand recognition well beyond their local area.'

Simon Numphud, head of AA Hotel Services, said “We are delighted to recognise our latest collection of restaurants that have moved into the top 10 per cent of the AA Rosette Scheme. These awards reflect the growing strength and depth of top quality restaurants across the UK and in particular the numerous impressive London openings over the last 18 months”.
