Ben Spalding will take up the position of executive chef at aqua shard today (11 May).

The appointment is the chef’s first permanent restaurant position since leaving Islington’s John Salt in 2012, and follows his month long residency at The Laundry E8 in February.

Located on level 31 of The Shard, the contemporary British restaurant is one of the busiest in London with reservations opening three months in advance.

Spalding will spend the next few months working closely with the aqua shard team to oversee the breakfast, lunch, afternoon tea, dinner and private event menus, with new dishes launching at the end of the summer.

He said: "I am absolutely delighted to be joining the team at aqua shard. I am excited to bring my knowledge, passion, drive and style of cooking to this fantastic restaurant in such an iconic building. I look forward to working with the team to build on aqua shard's existing success."

Spalding has previously worked at Michelin starred 28+ in Gothenburg, Restaurant Gordon Ramsey at Royal Hospital Road, Rhodes W1 under Gary Rhodes, and The Fat Duck.
