Roberto Castro will launch the 50-cover LOBOS Meat & Tapas Bar working alongside a group of former colleagues from Brindisa.
LOBOS, which means ‘wolves’ in Spanish, is set to be a ‘carnivore’s paradise’ serving the prime cuts of Iberico pig alongside a selection of tapas. Dishes will include the Lobos Bun - served with Chorizo Patty, Candied Bacon, Onion, Peppers and Fried Egg; and Martini and Herb stuffed Green Olives.
A cocktail menu will be available alongside predominantly Spanish wines, sherry and cava.
The restaurant team will work closely with Borough market traders, with the menu changing frequently depending on produce available at the market and recommended by suppliers.
Designed to evoke a wolf’s cave, the site will be a ‘cavernous space’ spilt over two levels beneath the rail arches of the market.
LOBOS Meat & Tapas Bar will open daily from 11am-11pm at 14 Borough High Street from mid June.
