In the first of our In Operation with... video series BigHospitality talks to Graham Hall, the managing director of CAU about the business, its aims and what helps to make it a success on a daily basis.

The Buenos Aires inspired restaurant group, which opened its first UK site in Guildford in 2011, has grown to 13 sites and isn't stopping there.

"By the end of this year we'll be up to 17 sites, which is eight openings this year," says Hall. "Our future plans are to continue growing at that pace. We're aiming to open eight to 10 sites over the next three to four years which will take us to about the mid 30s to 40 restaurants and that's where we want to be."

Hall attributes CAU's success to three things - its people, technology and its trusted food and wine suppliers.

Watch the video to find out more about Gaucho's younger sibling's daily operations, where the restaurant chain sits in the market and its future plans.

In Operation is BigHospitality's behind-the-scenes study of multi-site operators in the restaurant, pub and hotel sectors.
