Mark Moriarty has been hailed as the best young chef in the world after winning the San Pellegrino Young Chef of the Year 2015 award (SPYCY).

The UK and Ireland representative won with his Celeriac baked in Barley and Fermented Hay, cured and smoked Celeriac, Hazelnut, Celeriac and toasted Hay Tea dishes, the only vegetarian options in the grand final.

The competition was judged by some of the world’s greatest chefs including Gastón Acurio, Yannick Alléno and Massimo Bottura.

Before thanking his mentor chef, Clare Smyth, Moriarty said: “I am absolutely thrilled to have won the title of SPYCY 2015 for UK and Ireland – we don’t win enough of these kind of awards!”

“It has been an honour to take part in this competition, having been able to present my dish to the Jury – a truly stellar line up of the world’s greatest chefs.”

Smythe added: “Mark is a phenomenal guy and an incredibly talented young chef. I was absolutely blown away by his skill, his confidence and his maturity.”
